The Best Chocolate Chip Cookies EVER! – Kali’s Cookies

This week, in honour of my daughters birthday I’ve decided to share with you a family fave.  A (not so) top secret recipe for the best chocolate chip cookies you will ever make.  I used to bake them so often my youngest quickly mastered this recipe all on her own.  Now I dare say she makes them faster, and maybe even better than her Mom.  So in celebration of her Birthday week, yes, we celebrate for a week around these parts,  I’ve decided to give to you a very special gift:  our secret recipe for Kali’s Cookies.  I hope you will give them a try with your family and love them as much as we do.

Kali’s Cookies.  A Family Tradition.

Ingredients:

• 1 cup margarine
• 1/2 cup granulated sugar
• 1 1/2 cups brown sugar – tightly packed
• 2 large eggs
• 2 1/2 tsp. vanilla extract
• 2 1/2 cups all-purpose flour
• 1/2 tsp salt
• 1 tsp baking powder
• 1 tsp baking soda
• 2 1/2 cups semi-sweet chocolate chips (don’t skimp on the chocolate chips!)

Directions:

• Preheat oven to 350 degrees Fahrenheit.
• In a medium-sized bowl, mix together with a whisk, the flour, salt, powder, and soda. Set aside.
• In a large mixing bowl, using an electric mixer, cream together the margarine, white sugar, brown sugar, eggs and vanilla, beating until smooth and fluffy.
• Add dry mixture to margarine mixture, beating until everything is mixed well. Do not over mix.
• Gently fold in chocolate chips.
• By hand, form the dough into golf-ball-sized balls, and place them 2 inches apart on a parchment-paper-lined cookie sheet.
• Bake for 9 to 10 minutes, just until the edges are beginning to brown lightly.

**It’s better to underbake these cookies slightly, so remove them from the oven while they’re still a bit soft in the middle.

**Depending on the size of balls, can make up to 4 dozen cookies.

**We have tried this recipe with butter, but it’s so much better with Becel margarine.
